Watermelon and Basil Salad


  • Water melon: approximately 4 lbs (or half of a small melon)
  • Onion: 1 fine diced
  • Basil: 1/2 bunch
  • White Balsamic Vinegar: ½ cup
  • Olive oil: 1/4 cup
  • Dijon Mustard: 1 tbs
  • Salt & Pepper: to taste


  1. Peel the watermelon and remove the seeds


  2. Cut the melon in ¼ inch cubes


  3. Dice the onion very fine and cut the basil leaves not to fine


  4. Mix the vinegar with the mustard and salt and pepper in a bowl, add the olive oil while whisking to make a homogenized dressing


  5. Add the onion and basil


  6. Mix the dressing with the watermelon and place in the fridge, allow the dressing to be absorbed in the watermelon for at least one hour.


  7. Add salt and pepper if needed and serve cold
